The science of meat dishes is all pseudoscience, haha.
Eggs are definitely not "meat dishes". In the true sense, meat dishes refer to warm and seasoned vegetables, namely garlic, leeks, scallions, green onions, and xingqu (which seem to be somewhat similar to lilies). Buddhists believe that eating them will make people lustful, so they should not be eaten.
What we usually call meat is "fishy" dishes (that's how the meaty taste comes from). Buddhism prohibits killing, so fishy vegetables are taboo.
