Tips:

2. When making sugar color, the approximate ratio of vegetable oil, sugar and water is1:12:10;
3. Stir-fry the sugar color with slow fire, which can gradually melt the sugar, evaporate the water and make it fragrant; If the fire temperature is too high, bitter taste and burnt taste will appear;
After the sugar melts, it is the key. If you look closely, the small bubbles on the oil surface will turn into big bubbles. After large bubbles appear, water needs to be heated quickly; If you cook marinated vegetables, turn to high fire at this time and stir-fry the materials quickly to make the raw materials uniform in color;
