How to make salt and pepper shrimp

The preparation of salt and pepper shrimp is as follows:

Tools/Materials: shrimp, onion, ginger, salt, millet pepper, green pepper, onion, corn starch, cooking wine, Sichuan peppercorns, small meat incense , white sesame seeds, toothpicks, bowl, sealed bottle, water, cooking oil, pot, spoon.

1. Prepare the shrimps that have been thawed in advance, cut off the shrimp whiskers and shrimp guns, and then use a toothpick to pick out the shrimp threads. After all the shrimps are processed, be sure to wash them again.

2. Put the cleaned shrimps into a basin and start marinating. Cut some scallions and ginger slices into a basin, add a spoonful of salt to it, and add some cooking wine to remove the fishy smell. Mix well with your hands and set aside to marinate for about 20 minutes.

3. Make pepper and salt. No need to pour oil into the pot. Heat the pot and then turn to low heat. Add 30g of peppercorns and 3g of cumin and slowly stir-fry over low heat until the aroma is released. The numbing flavor and aroma of Sichuan peppercorns will be more intense when fried over low heat. After frying for about 5 minutes, add 10g of white sesame seeds to the pot and stir-fry. Continue stir-frying over low heat to bring out the aroma of the sesame seeds.

4. Let the fried condiments dry and place them on a dry chopping board. Use a rolling pin to crush the condiments. The more crushed the condiments, the better. If you have a blender, you can also use a blender to grind it. After grinding the salt and pepper, put it into a clean bottle and seal it to prevent the smell from dispersing. The salt and pepper made by myself at home has a very strong flavor. All of them are made from real ingredients, so you can eat them with confidence.

5. Prepare the side dishes needed to make salt and pepper shrimp. Cut some minced ginger and garlic, chop millet pepper, chop green chili, and chop some minced onion for later use. After the shrimps are marinated, pick out the green onion and ginger inside, then add corn starch in small amounts and mix well. Coat each shrimp evenly with starch.

6. When the oil temperature in the pot is 50% hot, turn to medium heat, put the shrimps in one by one and fry them. Fry the shrimps first, then control the oil and take them out. Add the fried shrimps just now. Go in and re-fry for about 30 seconds. When the shrimps are cooked and the skin is golden and crispy, you can control the oil and take them out.

7. There is no need to leave any oil in the pot. Pour in all the ingredients you just cut (minced garlic, minced ginger, minced green and red pepper) and stir-fry over medium heat until fragrant. Then add the fried shrimps, stir-fry quickly and evenly, then add salt and pepper according to your own taste, stir-fry evenly and it is ready to serve.
