1. 2. Marinate the beef, pour the chopped beef into the onion ginger water prepared in advance, and keep stirring for 2 minutes, so that the beef can fully absorb the onion Jiang Shui, then add an appropriate amount of oyster sauce and pepper, stir well again, then add the egg white of an egg, stir well again, then pour a small amount of starch to lock the beef moisture, stir well, then pour a small amount of cooking oil, stir well again and marinate for 15 minutes;
3. Out of the pot, pour an appropriate amount of cooking oil into the pot, add the marinated beef when the oil is hot, and slide it away quickly. After the beef is slippery and discolored, the oil is controlled and taken out for later use;
4. Leave a small amount of base oil in the pot.
