Crucitan carp and tofu soup

Ingredients required: one crucian carp, two pieces of tender tofu, one egg, and a handful of philodendron mushrooms , ginger, green onions, cooking wine, cooking oil, and appropriate amount of salt.

The steps are as follows:

1. Clean the crucian carp, spread it evenly with a small amount of salt and cooking wine, and marinate for a while.

2. Heat oil in a hot pan, add ginger and green onions and fry until fragrant, then add crucian carp, reduce heat and fry until both sides are slightly brown.

3. Add water to the pot, and the water should cover the fish body (add enough water at one time, do not add water in the middle), and bring to a boil over high heat. The soup cooked in this way must be milky white.

Roasted Tofu with Fungus

Ingredients required: tofu, fungus, green pepper, ginger, onion, garlic, salt, cooking oil, white sugar, oyster sauce, chicken essence.

1. Boil the tofu in a pot and then cut it into evenly thick slices; remove the seeds from the green pepper, clean them and cut them into pieces; soak the black fungus and add some Wash with salt and set aside;

2. Heat the pan with cold oil, add the tofu, and fry over medium-low heat until golden brown on both sides.

3. Heat oil in a hot pan, add ginger, onion and garlic and fry until fragrant. Add black fungus and stir-fry.

Minced Pork Tofu

Ingredients required: 2 pieces of tofu, 40 grams of pork, red bean paste, dark soy sauce, light soy sauce, cooking wine, ginger, green onion, salt, cooking oil , starch, sugar, chicken essence.

The steps are as follows:

1. Rinse the tofu and cut it into small pieces, soak or blanch in boiling water to remove the tofu smell. (Tofu is Laodoufu, also known as northern tofu.)

2. Clean the pork and chop it into minced meat (use pork belly with a little fat for more flavor).

3. Heat the pan with cold oil, add the minced meat, ginger and green onions, stir-fry over medium-low heat until the oil comes out, add cooking wine, dark soy sauce, light soy sauce and red bean paste and continue to stir-fry until fragrant.

4. Drain the soaked tofu, pour it into the pot, and stir-fry gently.

5. Add an appropriate amount of water, cook until the tofu is fragrant, add salt and sugar to taste, and then add the starch ditch soup.

6. Finally, reduce the soup over high heat, sprinkle in chicken essence and chopped green onion, stir evenly and serve.
