Ingredients: lamb slices, scallion, ginger, salt, white pepper, soy sauce, cooking wine, starch, sesame oil and sugar.
1. Slice mutton, clean it, wring out the water, add salt and white pepper to marinate 10 minute, and taste at the bottom. Pour other seasonings into a bowl and mix well. Mix the bowl juice well and set aside.
2. Wash the green onions and cut them with an oblique knife. Add a little oil to the pot, stir-fry the onion until fragrant, and remove it for later use.
3. Sprinkle a little dry starch on the sliced meat and fish it out.
4. Re-start the pot, stir-fry it with shredded ginger, pour the mutton slices after the oil is hot, and stir fry quickly.
5. When the color of the sliced meat turns from red to white, pour in the green onions.
6. Cook into a bowl of juice, stir fry quickly, and turn off the fire immediately after it is even, so that the fried mutton is not fragrant.
