This recipe for fried rice with eggs was submitted by a reader. As a side dish for 4-5 people.
Composition:
1 egg
2 teaspoons of Asian sesame oil
2 tablespoons vegetable oil
3 cups of leftover rice (200g, 7 ounces dry weight before cooking)
100g/4oz frozen peas (thawed)
4 shallots, chopped.
100g /4 oz bean sprouts
1 to 2 teaspoons of soy sauce
Ground white pepper, according to taste
Preparatory work:
1. Stir the eggs and sesame oil in a small bowl.
2. Heat the vegetable oil in a large frying pan. When the oil flashes and almost smokes, add rice and stir-fry for 3 to 4 minutes until it is completely heated.
3. Add peas, onions and bean sprouts. Stir-fry for about 3 minutes, constantly turning the rice.
Season with soy sauce and pepper, and then push it to the side of the pot. Pour the beaten eggs on the other side of the pot and let them set for about 10 second.
6. Use a chopstick, stir around the egg, break it, and then stir it with rice. Stir-fry for another minute and you can serve.
Chef's Notes: Add extra things at will, such as chopped ham or cooked shrimp.
