Ingredients: gluten, shrimp.
Accessories: star anise, onion, ginger, garlic, oil, salt, sugar, chicken powder, starch, water, cooking wine, soy sauce and sesame oil.
Tools: Pots, pans, plates.
1. Slice the gluten and cook it in boiling water for 2 minutes (slice it evenly regardless of shape).
2. Wash the shrimp, peel it, open its back and marinate it with cooking wine. I used bigger shrimp, so I changed their knives.
3. After the gluten is cooked, remove the water, wash it twice with cold water, and drain the water. Repeated cleaning can remove waste oil and impurities.
Stir-fry the shrimp in hot oil first, and then cut it off. Keep the fried shrimp and don't throw it away.
5. Stir-fry an star anise, then add onion, ginger and garlic (half of garlic), stir-fry again, add gluten and stir-fry, add cooking wine, soy sauce and water (just flush with gluten) and wait for boiling. Add sugar, salt and chicken essence, stir well, simmer for 3-5 minutes, and then thicken. During the thickening process, stir several times to observe the state of the juice. Finally, sprinkle the remaining minced garlic and stir fry, then add sesame oil and stir fry evenly.
