Ingredients: 200g pork tripe, 0/00g yam/kloc,
Accessories: jujube (dry) 10g,
Seasoning: green onion 10g, ginger 5g, white garlic 5g, star anise 3g, salt 3g, monosodium glutamate 2g and coriander 10g.
working methods
1. Wash yam and cut into pieces or strips.
2. Wash and cut pork belly, and season with refined salt, monosodium glutamate and aniseed.
3. Put the pot on fire, add 500g of fresh soup and tripe, and simmer until it is 70% cooked, then add yam strips, jujube, chopped green onion, shredded ginger and garlic slices, simmer until the yam is cooked, season with refined salt, monosodium glutamate and light sesame oil, and sprinkle with coriander segments. Serve.
Glutinous rice pig intestines
It's the first time to make glutinous rice pig intestines, because I miss the taste of my hometown! So thinking about doing this, washing pig intestines is a big project! Fortunately, the final result is still very satisfactory, not disappointed! Fat intestines don't stink, glutinous rice is delicious!
It's just that my first posting is a bit messy, please forgive me!
Composition details
Fat sausage, glutinous rice, peanuts, white sesame seeds, chopped green onion, yellow sugar and water.
1. Soak glutinous rice for 3 hours. Boil peanuts in hot water. Remove fat from pig intestines. Wash away the dirt with raw powder and white vinegar! (I forgot to take pictures in this step) Then mix the glutinous rice with peanuts, and use enema for 7 minutes at first, because the glutinous rice will swell after cooking.
2. Use a deeper cooking pot, put the filled glutinous rice in the pot (by the way, I forgot to tie both ends tightly with cotton thread or straw rope when enema), then flood the pig intestines, and stew them after the fire is boiled for about 1 hour!
3. When stewing, poke some small holes in the enema with a toothpick, so that the glutinous rice inside can touch the water and cook better! Then take advantage of the gap between cooking to boil the syrup yellow sugar and water, add a little corn starch to thicken it until the thick chopped green onion is fried in oil until it is dry and golden, and then stir in the syrup to fry white sesame seeds.
4. Finally, cut the glutinous rice into the pig intestines to prevent the glutinous rice from being cut. Rub some water or oil before cutting, cut sesame seeds, and then sprinkle with syrup to eat!
