The following is an introduction to how to make "tofu dishes". There are very few types of ingredients and the steps are very simple.
Prepare soybean flour. A family of four will need three to half a kilogram of flour. Soy flour is sold in supermarkets. Of course, you can also grind dried soybeans into powder yourself. The finer and smoother the powder, the better. In rural areas, rice pounding equipment used to be used to pound soybean flour. The soybean flour produced in this way is super smooth and is truly good.
Next, prepare half a pound or a pound of mustard greens. It is best to use fresh mustard greens. If you don’t have mustard greens, you can also use radish leaves. Of course mustard greens are the best ingredient. Mustard greens should be washed and cut into shreds. The thinner the shreds, the better. Do not cut them into large pieces. Prepare another half cup of rice vinegar. That is about 70 to 80 ml of rice vinegar.
The above three ingredients are basically enough. As for seasonings, you can add them according to your personal preference.
Put a little more than 3 pounds of water into an iron pot (non-stick pot is better), add soybean flour, and stir thoroughly to make the soybean flour completely dissolve in the water to form a thin paste.
Turn on high heat and cook slowly, stirring constantly with a spatula to prevent the soybean flour from sticking to the pot.
The bean paste began to roll in the pot as the flames licked the bottom of the pot. Don't get distracted at this time, otherwise the bean paste will overflow out of the pot. Remember to cook the soy flour!
The bean paste (also called soy milk) is almost out of the pot! In times of crisis, add shredded mustard greens, all at once. The bean paste in the pot became much better immediately due to the addition of shredded mustard greens. Continue to turn on low heat and cook slowly while stirring with a spatula so that the mustard bean paste is fully combined and does not separate from each other. At this point the pot will look like a piggy pot, but don't worry, it's fine.
I guess the bean flour and mustard greens are already cooked, now comes the most soulful part! That is: order tofu!
Fill the half cup of rice vinegar with water, that is, half vinegar and half water. Pour the vinegar water in the cup evenly into the pot. It doesn't matter if your hands shake due to nervousness. After pouring, use a spatula to gently stir the bean and vegetable mixture in the pot. Of course, the low heat cannot be stopped.
At this time, a surprising scene appeared: the pot that was just like a pig slowly changed its appearance! Clear soup appeared in the pot, and the bean paste turned into white and plump tofu (a mixture of green and white, of course).
"Tofu dish" was made successfully!
