Practice steps:

3. 6. Prepare a small bowl and add 1g monosodium glutamate, a little sugar, 2g chicken essence, 10g cooking wine and 3g soy sauce. Dilute with clear water, pour in a little water starch and stir well for later use. Mixing seasonings well in advance can reduce the time of pork liver in the pot and make it more tender.
7. After all the ingredients are ready, we will start cooking, heat the pot and add vegetable oil to the slippery pot to prevent the pig liver from sticking to the pot. After sliding the pan, pour out the hot oil, add the cold oil, pour the pork liver into the pan and stir fry quickly until the pork liver is smooth and discolored.
8. Immediately add onion ginger, pickled pepper and pepper, stir fry together, so that the pork liver can absorb the fragrance of small ingredients, then add green and red pepper slices, onion slices and potato chips, stir fry for a few times, evenly stir the prepared juice and pour it into the pot, stir fry quickly for 30 seconds with high fire, then pour Chili red into the ingredients to increase the spicy taste and oily feeling, and then continue to stir fry for a few times, then take it out of the pot and put it on the plate.
