Most of the pork bellies sold in the vegetable market stalls have not been cleaned up. After we buy it back, we need to remove the fat from the pig's belly as much as possible and wash the mucus on the pig's belly repeatedly. Cleaning the pig's stomach is a troublesome job. Some supermarkets will also sell boxed clean pork bellies, which will be easy to package when you buy them home (although there will still be a lot of mucus), but the price is more expensive.
Pork belly is cut in half and washed repeatedly inside and outside. Pour some vegetable oil on the pork belly, fully knead it to fully emulsify the oil and the mucus on the pork belly, and then rinse it off to remove most of the mucus on the pork belly surface.

3. Pour a lot of water into the pot and add pork belly. Keep the water in the pot boiling, then turn to medium heat and continue cooking for 3 minutes (without adding the lid).
4. After cooking, take out the pork belly, rinse it with cold water, and brush the inside and outside of the pork belly repeatedly. Then put it on the chopping board and chop it up.
★ This step can basically remove the mucus and odor of pork belly.
5. Shred pork belly and rinse 1-2 times.
6. Finally, in order to completely remove the odor of the pork belly, blanch the pork belly again. Put cold water in the pot, add shredded pork, bring to a boil with high fire, continue to cook for 1 min, and then take out the pork belly. At this time, you can stew soup with shredded pork belly.
★ Although the whole process is tedious, it can fully remove the odor of pork belly.
7. Then, let's see how cuttlefish is made. Soak dried cuttlefish in water for 3-4 hours in advance, and soak dried cuttlefish in hair.
8. After soaking the dried cuttlefish, remove the cuttlefish bones from the back and remove the cuttlefish teeth and eyes from the head. Tear off the film on the surface of cuttlefish (it is best to tear off the film on the tentacle of the head, but if the cuttlefish is too small, it is difficult to tear it, try to tear it).
9. Cut the processed dried cuttlefish into silk. Rinse shredded cuttlefish twice, which can be used to stew soup.
10, heat the pan and pour in a little vegetable oil. Add ginger slices and stir-fry until fragrant, then pour in shredded belly and cuttlefish, stir-fry quickly 1-2 minutes. Then add about 1200ml of water.

12. After the pot is boiled, cover it and simmer for 2-3 hours until the pork belly is soft and the peanuts are fully stewed. Add salt to the soup and season it according to personal taste.
★ If your pot is not used for stewing or frying, the stewing step can be to pour the soup into a casserole or other stewing pot for stewing. Keep the fire low and simmer slowly until the stew is enough.
★ The soup that is finally stewed should not be too much, and the soup will taste better if it has a strong feeling. Because the firepower is different from the sealing of the pot, please adjust the water quantity and the stew time according to the actual situation. If the water evaporates too quickly when stewing, you can add some boiling water.
Tips:
1. Pork belly will have a strong smell if it is not handled carefully. Of course, if you like the taste of pork belly, it will save you trouble.
2, pork belly should be stewed for enough time to soften. Peanuts also need enough time to stew, otherwise they will become unpalatable. The stewing time needs to be adjusted according to the actual situation. You can also stew in a pressure cooker, which will greatly shorten the stew time. But the pressure of different pressure cookers is different, please adjust it according to the actual situation (my pressure cooker is steamed and stewed for 50 minutes).
