There are three kinds of home-cooked prawns, fried prawns, steamed prawns and braised prawns.

1, fried prawns

Ingredients: 500g prawn, onion, ginger, cooking wine, soy sauce, salt, monosodium glutamate, sugar, vinegar and sesame oil.

Step 2 steam prawns

Ingredients: prawn 500g, sesame oil, cooking wine, soy sauce, monosodium glutamate, vinegar, soup, onion, ginger and pepper.

Practice: Wash prawns, chop off feet and whiskers, remove sandbags, sand lines and shrimp brains, and cut into four sections. Slice onion, cut ginger in half, cut ginger in half. Put prawns in a plate, add cooking wine, monosodium glutamate, onion strips, ginger slices, pepper and soup, steam in a cage for about 10 minutes, and take out. 3. Braised prawns in oil

Ingredients: prawn 1 kg, 2 tablespoons of soy sauce, sugar 1 tablespoon, 4 cloves of peeled garlic, and appropriate amount of water.

Practice: After the shrimp is washed, cut off the shrimp gun and drain it for later use. Put oil in the pan, heat for 4 minutes, then add garlic cloves into the pan until the garlic cloves are golden yellow, then add prawns and stir-fry for half a minute, add soy sauce and sugar, stir-fry evenly, then add less than half of the water of prawns, cover the pan and cook for another two minutes.

Matters needing attention in shrimp selection

1, see if the shrimp head and shrimp body are closely connected.

Fresh prawns have elastic muscles, so the connection between the head and the body is very close. After the shrimp dies for a period of time, the muscles will become slack, and there will be gaps at the joint between the shrimp head and the shrimp body. The bigger the gap, the less fresh the shrimp meat is.

2. See if the color of prawns is black.

Fresh shrimp shells are shiny and bluish green in color; The color of shrimp is yellow or white, and it is also very bright. If the shrimp head is black, it means it is not fresh.

Do you smell prawns?

Fresh prawns smell almost tasteless, with a hint of fishy smell at most. If prawns can smell bad smell or sour taste, it means that prawns have gone bad. If you smell a pungent smell, it's probably prawns treated with chemicals, so you can't buy them.

4. Is the shrimp elastic?

Fresh prawns are rich in water, and shrimp meat is more elastic, which can be recovered immediately by pinching it with your hands. If you feel soft with your hands and cannot recover, it means that the shrimp meat is not fresh.
