I don't like spicy food. I never put pepper in it. Shops with good business sell hundreds of bowls of tofu every day, with an average of one egg per bowl, and hundreds of eggs and biscuits. Shopkeepers and shop assistants must get up early and be busy. So most shops only sell old tofu in the morning and at noon. Some of them are open 24 hours a day. Generally, there are shops with guests all night near stations and factories.
