Crushing method of peanut fudge;
1. Put sugar into a pot, add 120g water, heat and boil, add maltose and salt, and add starch when the temperature is about 125℃.
2. Put the starch into the iron ladle (iron ladle with holes), put the ladle into the sugar pan, and scoop in a little syrup. Then mix the starch and syrup in the spoon with long bamboo pieces, and let the starch syrup flow into the pot from the leak. If it fails to leak out completely and there is dry powder in the ladle, scoop out the syrup and stir it again to make all the starch leak out, and the operation should be rapid.
3. After the syrup thickens, quickly add lard, stir it evenly, then remove it from the fire, pour it on the cold table or the stone slab of broken peanuts, scoop it up, cool it slightly, tablet it, cut it into strips and cut it into pieces.
