The key: the potato pieces should be crispy. Pay special attention to the heat. When frying sugar juice, the oil temperature should be controlled at 50% to 70% heat. Tips:

1. It is recommended to choose yellow sweet potato, which will be sweeter to eat, easy to fry thoroughly, and suitable in shape.

2. The sweet potato pieces must be drained before frying, otherwise the oil will splash and hurt people when frying in the oil pan. You can sprinkle some salt in the hot oil in advance to prevent the oil from splashing out.

If you want to pull out the silk of this dish, you should add maltose, and control the heat when cooking syrup, otherwise the syrup will burn. After the shredded sweet potato is done, the dish containing sweet potato should be smeared with sesame oil, or a few lettuce leaves should be placed at the bottom to avoid sticking to the bottom.
