Cook chicken legs/racks in cold water.
Add onion, ginger, star anise, fragrant leaves and cooking wine.
2 skim the floating powder after the water boils.
3 Simmer for 20 minutes.
4 prepare tofu skewers:
When stewing chicken soup, cut the dried tofu into squares, roll it into rolls and string it with toothpicks.
After the chicken soup is stewed, take out the chicken leg/chicken rack and all the seasonings.
6 Add salt, chicken essence, white pepper and prepared tofu skewers to the soup.
7 simmer for 20 minutes.
8 after stewing, add garlic juice, Chili oil, chopped green onion and coriander.
