When I was a child, I liked to eat simple fried rice with eggs. I just need eggs, garlic sprouts and salt. When I cook, I can eat two bowls of white rice, golden eggs and light green garlic sprouts.
1.? Prepare rice: it is best to use overnight rice, cook a little more one day in advance, and put the rest in the refrigerator. When cooking, there is less water than usual to ensure that the rice will not stick together. When it is taken out for use, put it into a larger basin and loosen it gently with a shovel.
2.? The eggs are scattered. Don't be lazy. You'd better stir them for a while and then put them in when the oil is seven minutes hot. When it turns golden yellow, you should probably break it with a shovel and push it to the side of the pot.
3.? Chopped garlic (usually as long as a finger) is fried in a pot. When it smells almost fragrant, you can pour in the rice. Turn off the heat slightly, stir fry quickly and evenly to prevent the pan from sticking.
4.? Add a little less salt than vegetables. If you are not sure, you can add a little less salt first, stir well and serve.
Rich version of fried rice with eggs
I made this for my husband after I met him, because I prefer the simple version. The so-called rich version is the one with sausages (lunch meat).
Other steps remain the same. Sausage grains are stir-fried after garlic sprouts, so that rice will taste like sausage.
Finally, the deluxe edition is recommended.
This is troublesome, but it's really delicious.
1.? Glutinous rice: Clear water does not cover glutinous rice. Soak overnight. Drain the water before frying, add a little oil and mix well.
2.? Stir-fry in a non-stick pan, add sausage particles on low heat (do not put oil), and the sausage will get oil. Then add mushrooms and carrots and stir fry until almost transparent.
3.? Pour a little more oil and start frying glutinous rice. When it is quick-drying, add a small amount of chicken essence water (a bowl of water and half a spoonful of chicken essence) and continue to fry until the glutinous rice becomes bigger and transparent.
4.? When the glutinous rice is almost cooked, pour back the sausage and mushrooms, then pour in a little water and stew for three to five minutes, and add salt before cooking.

In fact, cooking at home is more difficult because the fire is not strong enough. If you fry the rice in the pot and then pour the egg liquid into it, it will soon become a mess, so that kind of fire is more suitable for restaurants!
