Ingredients: 4 eggplants, pork belly 100g.
Seasoning: oil, water, soy sauce, soy sauce, oyster sauce, sugar, water starch, sweet pepper, onion and garlic.

1. Dice and marinate the eggplant, chop the meat, wash the eggplant and cut into strips, sprinkle a teaspoon for marinating 10 minute, and chop the pork belly.
Mixed sauce
Sauce: Add two spoonfuls of soy sauce+one spoonful of soy sauce+one spoonful of oyster sauce+half a spoonful of sugar+one spoonful of starch+half a bowl of water to the bowl and stir well.
Fried eggplant
Marinate eggplant, pour off excess water, wash and squeeze dry!
Add hot oil to the pot. When it's 70% to 80% hot, pour in eggplant and fry until it's slightly yellow.
Stir and plate.
Heat the oil in the pan, pour in the meat foam and stir-fry to change color.
Add chopped green onion, minced garlic and pepper, stir-fry until fragrant, then pour eggplant and stir-fry, pour sauce and cook until thick, and sprinkle with chopped green onion.
