Ingredients
100 grams of chicken fat, 4 slices of ginger, 1/4 shredded onion, 500 grams of chicken skin, 1/2 chicken with skin, 700 grams of chicken bones, water 3000㏄
Method
1. Pour the chicken oil into the frying pan, add the ginger slices and onion shreds, and fry over medium heat for 2 minutes until golden brown.
2. Add chicken skin, chicken and chicken bones, stir-fry over medium heat for about 10 minutes, then pour into a soup pot, add water and simmer over medium heat for about 3 hours, then filter.
