Practice steps:
Step 1: Wash the mutton and cut it with a knife. Soak in cold water for an hour, changing water in the middle. Take it out for later use.
Step 2: Pour cold water into the pot, add mutton, heat and boil, and skim the floating foam several times to make the soup clean.
Step 3: Add onion, ginger, pepper and medlar, simmer for about 1 hour (add salt to taste after half an hour) until the mutton is cooked and tender.
Step 4: Serve, eat directly or dip in garlic juice, salt and pepper as you like. No matter how you eat it, the meat is delicious.
