Salt and pepper fish, also known as salt and pepper whitebait, is a specialty of Fujian.
Ingredients: whitebait (1000g)
Accessories: egg (100g) and wheat flour (100g).
Seasoning: salt (5g), salt and pepper (15g), cooking wine (15g), onion (10g), ginger (15g), monosodium glutamate (3g), peanut oil (75g) and lard (refined).
Exercise:
1. Slaughter whitebait, wash it, take 2 pieces of clean meat, cut them into 4.5×l cm strips, put them in a bowl, and marinate them with refined salt, cooking wine and minced onion and ginger for 30 minutes;
2. Stir eggs and flour into egg batter, then add cooked lard and mix well;
3. Put the pot on the fire. When the peanut oil burns to 60% heat, hang the marinated fish strips in the egg batter, fry them in the pot until golden brown, take them out and pour cold oil on them.
4. Serve with a small dish of salt and pepper.
