Preparation and eating method

1. Sesame paste: Put sesame paste into a bowl, add appropriate amount of salt and cold water, and stir with chopsticks. When it is completely boiled, add a small amount of cold water, stir until it is completely boiled, then add water to stir, and repeat this for many times until the sesame paste is made into a thin paste (preferably with sesame oil). Be careful not to add too much water at a time when stirring, otherwise it will become a small pimple, commonly known as "dehydration", and it is difficult to mix sesame paste and water evenly.

2. Garlic paste: Mash garlic cloves, chop them into mud with the back of a knife or mash them into a bowl, and add appropriate amount of cold water.

3. Mustard juice: Put mustard noodles in a bowl, pour a little boiling water, stir them into hard balls with chopsticks, and stir them repeatedly to taste. Or cover it and put it in a warm place or near the stove. After about 20 minutes, the spicy taste emerges, and appropriate amount of cold water is added to make juice.

4. Oil Chili: Crush dried Chili (or use Chili noodles) and put it in a bowl. Put a ladle on the fire, add cooking oil and pepper, take out pepper when the oil is hot, and pour pepper after the oil is boiled.

5. Cold noodles: After the noodles are cooked, take them out and put them in a clean bamboo sieve, pour them with cold boiled water, drain the water, pour in a little sesame oil (or peanut oil), and mix the noodles to make cold noodles. A small amount of home-made noodles can be directly fished out and put into cold water, cooled, fished out and drained.

6. When eating noodles, pick the cold noodles into a bowl with chopsticks, put a little shredded cucumber, and then add sesame sauce, mustard juice, garlic juice, vinegar and Chili oil in turn (if you don't eat spicy food, you can adjust Chili-) and mix well.
