The difference between shiitake mushrooms is not whether they are old or tender. The best ones are those with thick canopies, complete shapes and not fully unfolded umbrella pleats. No matter how you cook it, blanch it in boiling water.
In terms of taste, dried mushrooms are naturally the best, and flower mushrooms are especially top-notch. The rich aromatic content of shiitake mushrooms will be converted into large amounts after drying. As for shiitake mushrooms, fresh ones are not the best.
