How to be a good Regan Noodles?

The first secret is of course to buy noodles. Generally, the stalls selling dumpling wrappers in the food market have this kind of powdered Reagan noodles, provided that you ensure that the noodle sellers are clean. Those who blow into the bag or rub it open with saliva should never buy its noodles. Around, there are similar packaged noodles in the supermarket now. Just buy a box while it's fresh, enough for two or three people in the family, no problem.

The second secret: seasoning (juice), this is actually invincible and simple. Pay attention to the picture below. Isn't it intuitive? There is absolutely no chicken essence monosodium glutamate on the breakfast stand, you know. In proportion, soy sauce is the protagonist. If you don't like old vinegar, you can just put a few drops to refresh the juice. If you like light, don't put salt in light soy sauce. It's best to mix the juice and taste it first. Everyone must understand. The following bowl of juice is Chao Dad's favorite classic formula, which is very intuitive.

The third secret, of course, is sesame sauce. I never thought about it, did I? The absolute faithful companion of Reagan noodles! However, please note that many brands are making sesame paste, no matter how fragrant it is, please note that when mixing it with Regan Noodles, you must pay attention to its viscosity. If the sauce is thick, it can't be stirred for ten minutes. So, mix the sesame paste (the professional name is one word: Xie) well until you accept it. The method is very simple, and the cooked oil point on the left (the oil dispersed after heating) is the key point.

Mix proper amount of cooked oil and sesame paste. Look, is the viscosity you want the one shown in Figure 2 below? Oh, by the way, a few drops of sesame oil will smell better.

The fourth secret: brush your face. Attention, everyone. Prepare a spoon and a pair of chopsticks, the longer the better. Blanch a proper amount of Regan Noodles in boiling water for 8- 10 second (it will be more perfect if there is a light bone soup at home). During the period, chopsticks are used to disperse quickly to ensure that each noodle is heated evenly. Ok, after 8- 10 seconds, lift the spoon, shake it, drain the excess soup, and then "cut" like the proprietress mentioned above! Pour it into the prepared bowl. Note: the process of ironing noodles must not last too long, otherwise Regan Noodles will swell too much, which will not only be ugly, but also make you want to call names. ...

Next, pour some prepared juice with a spoon, and then add a proper amount of roasted sesame sauce. By the way, you can also have some classic ingredients such as Chili oil, radish strips or sour beans and fried soybeans.

There is no need to write more about the process of kneading dough. I believe that everyone's skills are not necessarily worse than mine, haha. Just two principles: 1, mix while it is hot; 2. It is more fragrant to stir while eating. ...
