Sesame sesame seed cakes (reference quantity: 6 pieces)

Ingredients:

Bake base ingredients: 200 grams of all-purpose flour (i.e. ordinary flour), 110 grams of water, 1/2 tsp of quick dry yeast (2.5ml), 2g of salt, 1/2 tsp of fine sugar (2.5ml)

Sesame paste filling: 50g of pure sesame paste, 10g of sesame oil, 2g of salt , 1 tsp of pepper powder (5ml)

Surface decoration: 20g of fried white sesame seeds, 1 tsp of honey or maltose (5ml), 1 tsp of water (5ml)

Baking: middle layer of oven, heat up and down at 180℃, 18-20 minutes

Production process:

1. Mix the flour, salt, quick dry yeast and sugar in the cake base ingredients Evenly, add water and knead into dough. Place the dough on the chopping board and knead vigorously for 10 minutes until the dough becomes smooth and elastic (depending on the water absorption of the flour, the water in the formula needs to be added as appropriate until it becomes a soft dough). Cover the kneaded dough with plastic wrap or a damp cloth and let it rest at room temperature for 20 minutes.

2. Mix pure sesame paste, sesame oil, salt, and pepper powder to form a sesame paste filling, so that the sesame paste becomes fluid as shown in the picture. If the sesame paste is dry, you can add more sesame oil to dilute it.

3. After the dough has rested, roll it out into a large thin dough on a chopping board sprinkled with anti-stick powder.

4. Pour the sesame paste filling onto the dough and scrape it evenly with a scraper so that the sesame paste filling is evenly spread on the dough.

5. Roll up the dough from one end. While rolling, stretch the dough to make it as thin as possible, and roll it as many times as possible.

6. Roll it to the end and pinch the edge tightly. The step of rolling the dough is very important. The more turns you roll, the more layers you will have.

7. Cut the rolled dough into 6 parts (the dough must be rolled more times. If it is not rolled enough, each layer of dough and sesame paste will be too thick. When cutting, the sesame paste will fall from the cross section flows out).

8. For each cut dough, pinch the two ends together with your hands so that the sesame paste filling is not exposed.

9. After pinching, let it rest for 15 minutes.

10. Place the dough upright on the work surface and flatten it with the palm of your hand.

11. Use a rolling pin to roll it into a round cake shape.

12. Mix 1 tsp of honey and 1 tsp of water and use a brush dipped in honey water to apply a thin layer on the surface of each round cake.

13. Press the side brushed with honey water into the white sesame seeds so that the surface of the dough is covered with white sesame seeds.

14. Place the sesame side up on the baking sheet, put it in a preheated oven with upper and lower heat of 180℃, bake for 18-20 minutes, until the surface turns yellow and crispy, and then take it out of the oven. . Freshly baked sesame cakes are the most delicious and soft. When you bite into the sesame seed cake, you can see the clear layers. The more layers the sesame cake has, the better it tastes~

TIPS:

1. When rolling up the dough, stretch the dough while rolling it up to make the number of turns The more, the more layers the final product will have.

2. The honey water is brushed on the surface of the cake base, firstly to make the surface easy to bake and secondly to make sesame seeds stick to the surface. If you like the dark color on the surface of the sesame cake, you can brush it with a layer of soy sauce first, and then brush it with honey water after the soy sauce dries.

3. Children’s shoes that don’t like the smell of peppercorns can reduce the amount of peppercorns used. On the contrary, you can increase it according to your preference.

4. If you like sesame biscuits that are very soft and fluffy, let them ferment at room temperature for 20-30 minutes before putting them in the oven. The baked biscuits will be very soft and soft.
