mung bean
Methods/steps
Wash this year's mung beans (which must be new beans of that year so that they can germinate) and put them in a container for 24 hours. Because it is midsummer and the temperature is high, you can soak them for only one night.
Wash the soaked mung beans again and remove the peas or rotten peas floating on the surface. Most of these peas cannot germinate.
Find a container with a hole in the bottom, such as a basin. I use a stainless steel steamer. Spread a layer of drawer cloth on the steamer. This cloth should be soaked with water, but it should be wrung out. Then spread the checked mung beans on the drawer cloth and spray some water. Then cover the sprayed mung beans with a layer of drawer cloth. Soak the same cloth but wring it out. It is best to cover it and put it in a high temperature and dark place.
In the process of sprouting, mung bean sprouts should be sprayed with water about 4 times a day to ensure the required humidity, but attention should be paid to avoiding direct sunlight when spraying water, because mung bean sprouts will turn red when exposed to sunlight during growth, and germinated beans will be ugly and tasteless.
After about 2 days, when the bean sprouts grow to 3-4 cm, a heavy object, such as a stone, should be pressed on the bean sprouts. I use a big soup bowl filled with water to thicken it.
On the third day, you will be surprised to find that your bean sprouts grow very fast. According to personal circumstances, you can eat it on the third day.
Matters needing attention
The utensils and gauze used to make bean sprouts must be kept clean, otherwise the bean sprouts will go bad.
More frequent water spraying is needed to ensure the humidity it needs.
