Exercise:
Step 1: Beat the eggs into a bowl and beat them hard until they foam. Pick it up with chopsticks and the bottom can be connected into a line.
Step 2: add a quarter spoon of refined salt, add a few drops of soy sauce and stir well.
Step 3: Prepare warm water. The ratio of warm boiled water to egg liquid is 1.5: 1. Slowly pour the warm boiled water into the egg mixture, while stirring the egg mixture with chopsticks until the warm boiled water is added.
Step 4: Stir the egg mixture with warm water again until bubbles appear.
Step 5: Use chopsticks to skim off the foam on the surface of the egg liquid, add water to the pot and put it on the grate, and the water will almost drown the grate.
Step 6: Put the beaten egg liquid on the colander, cover it, and steam the eggs over medium heat.
Step 7: After about five minutes, the water boils, turn to low heat and steam, with or without a little water in the pot. Steam on low heat for about ten minutes. Sprinkle chopped green onion and drop a few drops of sesame oil or sesame oil along the bowl wall.
