Method
Wash the fish head and remove the gills, cut the fish head into two halves from the middle with a knife under the lower jaw, wipe off the water, and pat the surface with a layer of dry starch. Soak the dry vermicelli in warm water until soft. Wash the enoki mushrooms and cut off the roots.
Heat the oil in the pot over medium heat. When it is 70% hot, add the fish head and fry over high heat until golden brown. Remove and drain the oil.
Take 20ml of oil and put it into a casserole. After heating, add the green onion segments, dried chili peppers, star anise (aniseed) and garlic and saute until fragrant. Then add the fish head, dark soy sauce, Shaoxing wine and white wine. Tips
