1. Wash the beef and cut it into cubes along the grain of the meat, about one centimeter. Be sure to control the water.
2. Add oyster sauce, soy sauce, a little salt, chicken powder, a little egg white and a little cooking oil to the beef and marinate for about 30 minutes. It can be refrigerated in the refrigerator.
3. Wash the shell of pitaya, cut it into half a big, usually small shape longitudinally, take out the pulp and cut it into cubes the size of beef granules, and keep the part with the big shell for later use. Don't choose too ripe pitaya, because mine is a little ripe.
4. After the wok is heated, add an appropriate amount of cooking oil, add minced onion and ginger, stir fry until fragrant, then add marinated beef and stir fry quickly, add soy sauce and white sugar again to taste until cooked, and turn off the heat.
5. Pour the diced pitaya into the pot and stir-fry it quickly with waste heat. This will keep the aroma of pitaya.
6. Serve, plate and sprinkle with fresh pepper.
