Introduction of chrysanthemum meat
Chrysanthemum meat is a famous dish of Han nationality and belongs to Cantonese cuisine. Pieces of translucent fat pork are mixed with a layer of chrysanthemum candy made of semi-fresh and semi-dry chrysanthemum petals. When eating, the fat is sweet and delicious, cool but not greasy, and the chrysanthemum petal liquid smells fragrant. It is a beautiful traditional snack and a precious gift in Xiaolan area of Zhongshan. Chrysanthemum meat is mainly produced in xiaolan. The traditional practice is to select the petals of local famous chrysanthemums and process them to semi-dryness, then select high-quality fat pork, carefully process it to remove greasy quality, and then pickle it with sugar into "crystal meat", so it can be sweet and delicious, refreshing but not greasy.
