Chop 70% lean meat and 30% fat meat into minced meat, or go to the market to buy minced meat. Personally, I feel that my chops are more fragrant and cleaner, and the meatballs are more energetic. Add Jiang Mo, salt, raw eggs and pepper, stir in one direction by hand, add a little water in the middle, and then stir vigorously. After the water is dry, add it and repeat it three times to make the meat stronger. Just insert the chopsticks into the mixed meat, don't pour them.

Put rapeseed oil into a small pot, boil it and add a little pepper to remove the fishy smell of rapeseed oil. Turn off the fire and wait until the oil temperature drops to about 50℃. Put the kneaded meatballs into the oil pan and fry them slowly over low heat. Generally, lion heads should be made bigger, and 500 grams can fry six. The croquettes will shrink, which should be considered. Because the meatballs are big, they should be fried twice. When the surface of meatballs is golden yellow, chopsticks can be clamped tightly.
Step 3/4
I made large, medium and small dishes during the Spring Festival, each with its own way of eating. Now get ready to burn! Add a little oil to the pan. When the oil is hot, add the soaked fungus and yellow flowers and stir-fry for a while. Add four fried meatballs, add soy sauce and sugar, stir fry a few times to make the meatballs change color. Add water and various seasonings to simmer, concentrate the soup, put the meatballs on a plate, add leeks to the soup, boil and pour them on the meatballs.
