What is Vince's tofu?
Siwen tofu originated in Yangzhou City, Jiangsu Province, and is a famous traditional dish in Jiangsu Province. It belongs to Jiangsu cuisine-Huaiyang cuisine. This dish has a long history, extremely strict selection of materials, fine knife work, soft and mellow, and it melts in the mouth.

This dish is also a good menu for the elderly and children. Yu Yue in Qing Dynasty wrote in Notes on Tea Fragrant Room: "The word' Si Wen Xi Fu' is poetic and good at making bean curd soup and sweet porridge. Those whose laws are effective are called Si Wen Tofu. " Diaodingji is also called "Assorted Tofu Soup".

Siwen tofu was invented by Yangzhou monk Siwen during Qianlong period of Qing Dynasty. Siwen tofu is related to Emperor Qianlong. According to legend, when Ganlong visited Tianning Temple in the south, the abbot Si Wen offered tofu soup and beet porridge many times. After Gan Long ate it, he was full of praise, and told the imperial chef eunuch to write down the practice and do it after returning to the palace. The practice of Siwen tofu spread like wildfire, and people followed suit.

When making Siwen tofu, not only the materials are strict, but also the chef's knife work is very fine. Mushrooms, winter bamboo shoots, ham, chicken breast and other ingredients need to be cut into hair-thick silk.
