2. Hot and sour pickled peppers and fish glue
Ingredients: 200g of fish glue, onion, ginger, garlic, coriander, pickled pepper, corn oil, etc.
Exercise:
(1) Soak the fish glue first, so you can cut it.
(2) When the gelatin is soft, cut it into small pieces.
(3) Add a proper amount of corn oil into the heating pan, and then put the fish glue cut into small pieces into the oil pan. At this time, turn down the fire and fry it gently. Pay attention to cool the oil in the pot and fry it slowly to ensure that the fish belly can be fully fried.
(4) Take out the fried fish glue and soak it in cold water. Sometimes it may float on the water. At this time, we will use locks such as bowls and pots to hold it underwater. This process takes a long time to complete, preferably more than 10 hour. The standard of fish glue is that it looks soft and feels elastic by hand.
(5) In order to remove fishy smell and greasy taste, you can add a teaspoon of edible alkali to the soaked fish glue, and then rub it repeatedly by hand. After the fish glue is washed, squeeze out the water for later use.
(6) Cut onions, ginger, garlic, coriander, pickled peppers, etc. For later use.
(7) Add an appropriate amount of vegetable oil to the hot pot. When the oil is 60% hot, the ingredients such as onion, ginger and garlic will be fragrant, and then add chopped pickled peppers to fry for a while, and the fragrance will be better.
(8) After the pickled peppers are fried, add a spoonful of white sugar and stir well, then put the fish maw prepared by Yi Bei into the pot and stir together.
(9) Add seasonings such as salt and chicken essence according to your own taste, add some water or broth, and simmer for a few minutes. After the fish glue is tasty, add the small parsley and stir fry a few times.
