I heard that at the local wedding banquet, the first staple food on the table is noodles with wencheng tendons. Brocade noodles are very common and can be seen everywhere, but there are many kinds of spices for Wencheng Brocade noodles, such as dried razor clam, cauliflower and mushrooms. When a large plate is served, all you see are condiments, and the brocade hidden below becomes a supporting role. Take a bite. It smells good. Of course, this seasoning is not static, and different places will put different seasonings according to their own cooking methods.
My favorite dish is Wencheng tofu, which looks rough, but tastes fresh and tender in my mouth. It is said that as long as the tofu is cross-cut, if there are many holes in the tofu, it means that the tofu must be made of pure beans. This kind of tofu is a local specialty. Of course, it is impossible to eat without cooking. It should be neither salty nor light, and the soup is delicious.
Wencheng is a mountainous area, and there is not much seafood, but I especially like to put all kinds of dried seafood when cooking. For example, dried razor clam and dried cuttlefish can also be seen in this wencheng tofu. White land is a kind of wild vegetable that can be used as medicine, and it is a good medicine for clearing away heat and reducing fire blindly. Fresh leaves can be used to make tea, and the brewed tea juice is clear and green, which is very beautiful. White ground can be fried with eggs or made into soup with eggs. When cooking soup, there is a nice name called white ground warm egg, which is also cool and delicious.
Wencheng is known as the "hometown of rabbits", so rabbit meat makes many dishes, such as roast rabbit belly with milk beads, roast rabbit tongue, roast rabbit meat with others, and even dry rabbit meat. The medicated rabbit here is particularly distinctive: first, the rabbit meat is braised in brown sauce, and then stewed for a while, so that the rabbit meat is tender and crisp. Finally, Chinese wolfberry, codonopsis pilosula, red dates and other essences are added for supplementary food, and they are put into a pot and fried together. After the pot is taken out, it is a medicine rabbit.
Wencheng's bitter dried bean curd is also a local specialty. The process of making Cucui tofu is very complicated. Cucui powder should be melted into slurry, heated, then frozen, then made into blocks and fried with pickles. It is hard, like dried bean curd, but tastes like dried sweet potato. Wencheng dog meat is also a must-eat dish for many people after Wencheng. There are several cooking methods for dog meat. Braised pork is most suitable for the public and popular with local people. Sweet potato wowotou, pepper and salt pine worms are also local "local products" in Wencheng.
