Recipe for Braised Pork Trotters

Prepare ingredients: pig trotters, cooking wine, Sichuan peppercorns, cinnamon, star anise, bay leaves, dried chili peppers, garlic, ginger, chives, rock sugar, light soy sauce, and dark soy sauce. The method is as follows:

1. Wash the pig's trotters, cut them into pieces, and soak them in water for 1 hour.

2. Put the pig's trotters in the pot with cold water, pour in the cooking wine and ginger slices, and blanch them.

3. Take out the pig's trotters, remove the hair, rinse with water and drain.

4. Pour oil into the hot pan, add Sichuan peppercorns, stir-fry the Sichuan peppercorns over low heat until fragrant, and remove the Sichuan peppercorns.

5. Pour the star anise, cinnamon, dried chili and bay leaves into the pot and stir-fry until fragrant. Add the pig's trotters and fry until the skin is golden.

6. Pour in cooking wine, light soy sauce, and dark soy sauce, stir evenly, add water to cover the pig's trotters, add garlic, ginger, and green onion, bring to a boil over high heat, and simmer over low heat for 1 hour.

7. Add appropriate amount of rock sugar to taste, reduce the juice over high heat, and remove.
