Pour the dried grapes into the prepared container and lay them flat. Sprinkle soft sugar directly on the grapes. Grapes don't need special pressing. Drain the water in the groove of the altar mouth and cover it. There should be about 1/3 space in the jar.
Wait for the grapes to ferment. August and September, it will take about 20 days. Cold weather takes a long time. The weather is very cold, the fermentation is not complete, the alcohol consumption is small, and the taste is not good. In the process of fermentation, we can see that the grape juice gradually separates out, and the more it spreads, the higher it is. You can hear the sound of bubbling. The more fermentation, the more foam. After the fermentation is completed, there are basically no bubbles. At this point, the wine has basically flooded the grapes.
When pouring wine, squeeze the grapes in the jar with the prepared clean gauze until all the liquid is squeezed out. Wine should be put in a glass container, never use a plastic container, or the wine will smell like plastic and will be completely broken.
After two or three days, the wine can be drunk. Not so sweet, the wine is rosy. Soft white sugar is converted into alcohol by "desugaring" (it is said that this is a term in the wine industry).
