Ingredients: three eggs, seasoning: one spoonful of salt, two shallots, two spoonfuls of oil, two spoonfuls of oyster sauce and a proper amount of cooked white sesame seeds.
Step: Add a spoonful of salt to three dozen eggs and beat well. Lean meat powder is about one or two. If you like spiced onion, you can chop it with two spoonfuls of oil (only one spoonful if lard melts), two spoonfuls of oyster sauce and a proper amount of cooked white sesame seeds. Put oil on the fire and heat it to 60% heat. Add minced meat and salt and stir-fry until cooked. Add oyster sauce and chopped green onion, stir-fry until fragrant, and put in a small bowl for later use.
Put a steamer in the pot and add water to boil. Stir the egg liquid with 50% hot purified water and oil in Rigaillaud, put it on a steaming rack and steam it with medium-high fire. When steaming for about four minutes, open the lid and air it for more than ten seconds, then cover it and continue steaming.
When steaming for about three minutes, insert bamboo chopsticks into the egg in the middle of the bowl to check it. If it is still too thin, cover it and steam it for more than one minute before checking until the eggs at the bottom of the bowl are solidified to the same degree as the surface of the eggs. Take out the bowl, spread the minced meat on the surface of the egg, sprinkle with white sesame seeds and serve.
Steamed eggs in microwave oven
Ingredients: two eggs, clear water (or chicken soup), salt, shrimp, mushrooms and chopped green onion (optional).
Steps: Beat the eggs evenly, add the same amount of water or chicken soup, stir well, add the right amount of salt to taste, then put the egg juice into a large bowl and wrap it with plastic wrap. Plastic wrap must be sealed, otherwise air will run into the egg liquid, and the steamed eggs will not look good or taste good.
Put the big bowl in the microwave oven and steam it with "thaw" fire. The reason why small fire is used is that eggs will slowly solidify due to slight heat. If a fire is used, the egg will "explode" immediately.
Two eggs need to be steamed for about 15 minutes, but different microwave ovens can be adjusted appropriately. If you want to make the steamed eggs fancy, you can take them out when the eggs are almost steamed, add shrimp, mushrooms and chopped green onion, and then seal the bowl and steam them.
