What was the original name of Quanjude? What is the mystery that has not been solved so far?
Quanjude was formerly known as Dejuquan. Quanjude, formerly known as "Dejuquan", is a shop selling dried and fresh fruits on Qianmen Street. After it closed down, it was bought by a vendor named Yang and renamed as "Quanjude" (Figure 6). With his flexible mind, Yang correctly judged the situation, grasped the changes of consumer demand, adjusted the product structure in time, and constantly explored and innovated, making Quanjude profitable every year. About the second year in Xuan Tong, the store expanded and added cooking. In the Republic of China, Shandong cuisine was added. 1964, Quanjude built a spacious and bright new store opposite the old store (Figure 7). In 2005, according to the "Qianmen Street and East District Protection and Renovation Development Plan", Quanjude was listed as the original rebuilt building, and the scheme was designed.
