Methods/steps:
Wash the fish, and make a few cuts on your back, both sides.

Cut the red pepper into cubes.
Put oil in the pan and some salt in the oil to prevent the fish skin from touching the pan.
Dry the fish and put it along the side of the pot, or the oil will spill.
Fry one side and the other side. It doesn't matter if there are salt particles on it.
Put oil in the pan, add sugar and stir-fry until brown.
Put the fried fish in the sugar color, and the fish will soon become red and thick.
Add cold water after coloring both sides, and cook the fish in cold water. This fish is very tender.
Add a spoonful of cooking wine to remove fishy smell and enhance fragrance.
Add shredded ginger and minced garlic to taste.
Boil a spoonful of lard to soften the fishbone.
Finally, add diced red pepper and cook for 5- 10 minutes.
Precautions:
1. Braised and fried sugar will make the fish tender and fresher.
2. Cook fish in cold water. This fish is very tender. Grandma taught me.
Put some lard when cooking fish, and the bones will be softer.
