Chinese seafood dry noodles
Ingredients
1 lemon or lime (lime), juice, 2 teaspoons of honey, light soy sauce (light soy sauce) ) 2 tablespoons, 4 medium-sized scallops (about 200 grams), cut each into four pieces, 24 fresh tiger prawns (about 170 grams), peel and remove the intestines, dried seaweed 10 grams, 340 grams of thin egg noodles, 1 tablespoon of oil, or 2 teaspoons of rapeseed oil mixed with 1 teaspoon of black sesame oil, 300 grams of bean sprouts, 150 grams of Qingjiang vegetables (Xiaotang vegetables), chopped (a few leaves can be left for decoration) ), 11/2 teaspoons of pickled ginger Method
(1) Mix lemon juice or lime juice with honey and 1 tablespoon soy sauce. Pour the prepared sauce into the scallops and prawns.
Mix well, set aside, and marinate for 5 minutes.
(2) Put the seaweed into a bowl, pour in 300 ml of cold water, and leave to ferment for 8 to 10 minutes. Place the noodles in a large bowl and pour in boiling water until the noodles are completely immersed, soak for 4 minutes, or cook the noodles according to package instructions. Drain and set aside.
(3) Take out the scallops and prawns, pat dry with paper towels, leaving the sauce. Heat oil in a pot, add scallops and prawns, stir-fry for 2 to 3 minutes, until the shrimp meat turns red and the scallops are opaque. Dish up and set aside.
(4) Add bean sprouts, green vegetables, remaining sauce, remaining 1 tablespoon soy sauce and pickled ginger to the pot, stir-fry for 1 to 2 minutes.
(5) Return scallops and prawns to the pot, add drained seaweed, stir-fry for 1 minute until heated through, then put into a bowl with noodles and serve.
