1, Zhen 'an bacon
Bacon, also called bacon, is a local specialty of Zhen 'an in Shangluo City and a traditional gift of Zhen 'an people. Zhen 'an bacon has the same appearance, cooked and sliced, transparent and shiny, bright color, red with yellow, mellow taste, fat but not greasy, thin but not stuffed, not only unique flavor, but also rich nutrition.
2. Steamed noodles with potatoes and beans
There are all the streets and alleys in Shangluo. Beans, potatoes and noodles are all steamed by steam, and the noodles are constantly slapped during the steaming process, so that the noodles can absorb the soup evenly. It's better to steam the beans and potatoes first, and then put them into the dough, which is more delicious.
3. Huaihua Maifan
Authentic Shangluo cuisine that can only be tasted in spring. Every time before and after Tomb-Sweeping Day, Sophora japonica "blows open the petals of 10,000 pear trees" overnight, picks up the seemingly blooming Sophora japonica bones, washes them with boiling water, drains the water, adds a proper amount of flour and a little salt, puts them in a cage for steaming for about 20 minutes, and then adds sesame oil, pepper and chicken essence for seasoning.
4. Tussah bacon
Zhashui bacon is a traditional special food in Zhashui County, Shangluo City, Shaanxi Province. Tussah bacon takes fresh pork slaughtered during the Spring Festival as raw material, with spices such as salt, pepper, star anise, clove, star anise and cinnamon. Soak for a week or two. Hang it with a palm leaf rope to dry. It is made of cypress branches, Chinese toon bark, sugarcane bark and other wood by smoking.
5, Shangzhi meat
Shangzhi meat is ruddy in color, soft and waxy in texture, fat but not greasy, melts in the mouth and has a strong Shangzhi flavor, which is a unique flavor dish in Shangluo, Shaanxi Province.
