working methods
1. Add marinade and beef into cold water, boil for 5 minutes, take out and cut into strips; Cut the scallion into small pieces, slice the ginger and garlic, and shred the dried pepper.
2. When the oil temperature is 80% hot, add pepper, star anise, kaempferia kaempferia, ginger and garlic and stir-fry until fragrant.
3. Pour in shredded beef and shredded onion and stir fry over medium heat.
4. Add sugar, cooking wine, soy sauce, salt and vinegar in turn.
5. Turn to a big fire and quickly collect juice (about 3 minutes). When the water in the pot is dry, add soy sauce to adjust the color.
6. Turn to low heat to dry the water (about 10 minute), add Chili noodles and pepper noodles and stir fry 1 minute, and add dried Chili shreds and stir fry 1 minute.
7. Finally, sprinkle with sesame seeds, stir well and serve.

1. Beef must be cooked before frying to avoid burning wood. Because it is cold beef, we use less gravy than braised beef. Our gravy is 2 bags, 1 bag is enough.
2. The time for braised beef should not be too long, just 5 minutes.
3. When the beef is sliced, it should be cut against the grain, so that the cut meat looks chewy.
4. When frying seasoning, we must pay attention to the heat, and use it in turn with big fire, medium fire and small fire (time: 1 minute for big fire, 5 minutes for medium fire and1minute for small fire). The beef fried in this way is chewy, tender and not fragile.
This dish is made according to Sichuan taste, and it will be more spicy and delicious with Chili noodles. If you can't eat spicy food, you can skip Chili noodles and Chili noodles.
