[Braised tofu with scallion]
Ingredients: tofu, shallots, onions, starch.
Seasoning: salt, chicken powder, pepper, soy sauce, oyster sauce, soy sauce.
1: Prepare a piece of old tofu, cut it in the middle first, then cut it into strips with the thickness of 1.5 cm with another knife and put it in the pot. In the choice of ingredients, it is best to use old tofu. The purpose of this is to make the old tofu more fragrant after frying and not fragile.
Prepare a handful of shallots, wash them, cut them into 3 cm long pieces and put them in the pot. Be sure to put the shallots before cooking, which can increase the fragrance of the shallots.
Cut a white onion from the middle and cut it into chopped green onion for later use.

When one side of tofu is fried to golden brown, turn the pot upside down and continue frying the other side. Shake the wok and continue frying for 3 minutes until both sides are golden brown. After the tofu is fried, it can be poured out to control the oil.
3. Add some cooking oil to the pot. When the oil temperature is 50% hot, pour in dried red pepper and stir-fry until fragrant. Then pour in chopped green onion and saute until fragrant. Add half a spoonful of water, 2g salt, 1g chicken powder, 0.5g pepper, 5g soy sauce and 5g oyster sauce, and stir to melt.
After the soup is boiled, add a few drops of soy sauce to color it, then pour in the fried tofu, turn on a small fire and push the tofu continuously with a spoon for about two minutes. The purpose of this step is to burn the tofu thoroughly until it tastes delicious.
After 4: 2 minutes, pour in the onion and stir well. Don't add the shallots too early, so as not to lose their fragrance.
Then pour a little water to make the tofu tender, and then hook a little water starch. After simply turning over, you can turn off the fire and put it in the plate.
