Production process:
First go to the market to buy a fresh sparerib, take it home, chop it into small pieces, the state is as shown in the above picture, then put it in the pot with cold water to bleed, then rinse it with cold water and pour it into the pressure cooker.
Then, inject a small amount of water into the pressure cooker, add 2 onions and a little salt, and bring to a boil.
After the pressure cooker is started, turn the heat down and press it for 5-8 minutes to be completely cooked. After cooking, take it out and put it on a plate for later use. This can not only shorten the firing time, but also make it softer and more convenient to eat, especially suitable for the elderly with bad oral cavity.
Then, clean the green peppers, cut off their pedicels, pat them one by one (with or without seeds), pour them into the pot without oil, and then add 1 tablespoon salt. When frying, press down as hard as possible with a spoon so that their fragrance will be completely released. After the steam is fully fried, they can be fished out and put into a plate for later use.
Pour a little base oil into the pot. When the oil is hot, add a proper amount of garlic cloves, then add the cooked ribs, stir-fry until fragrant, and then add the peppers. Remember: "Stir-fry the meat first, then put the green pepper, don't make a mistake", otherwise the water vapor will re-enter, thus affecting the crispy taste.
Then add 1 tablespoon soy sauce, and a little chicken essence, oyster sauce and soy sauce, slightly color, continue to stir evenly with high fire, and then take out the pot and put it on the plate. Fried pork ribs with green peppers are spicy and delicious, crisp and refreshing, super delicious, more chewy and more satisfying than fried pork with green peppers!
