Banquet is an important part of China traditional culture, and its form, etiquette and entertainment have influenced our culture to varying degrees. In the history of China, there are many banquets that go down in history. There are many famous banquets in Shaanxi province with profound historical and cultural heritage, which also gave birth to many banquet standards.
In terms of time, it can be divided into ancient famous banquets and modern famous banquets. Most of the famous banquets in ancient times were court banquets, such as barbecue banquets, spring banquets and Qujiang banquets for new scholars. The most famous modern banquets are the following five famous banquets.
First, imitate the Tang banquet.
The banquet was held in the Tang Palace, where customers sat by the case and the menu was made into scrolls. Tableware and cups are made in imitation of the Tang Dynasty. The waiters are all dressed in Tang suits, and their hair is rolled up high to wait on them. At the beginning of the banquet, a eunuch held a dusting hand and read out the "imperial edict", explaining the name and nature of the banquet. The band played silk and bamboo, and everyone raised their glasses to respect each other. Every time a dish is served, there will be a "housekeeper" to read the name of the dish and explain the rich cultural charm of the dish. During the dinner, music and dance in the Tang Dynasty were performed and Tang poems were recited. The wine that Li Bai and Yang Guifei drank was "Huang Gui thick wine", and the dishes, noodles and soup they ate were mainly the food presented to Tang Zhongzong in the "barbecue banquet menu", with dozens of courses. Including: Wangchuan sample, Wusheng plate, three-skin silk, camel hoof flower soup and so on. Its outstanding features are fine selection of materials, simple modeling, rare varieties and strong cultural color.
Second, nine grades and thirteen flowers
The master of Feng Shui in Shaanxi's national studies is grim: Nine products and thirteen flowers are necessary for banquets in Dali County, Shaanxi Province, with a history of more than 600 years. "Nine products and thirteen flowers" are very particular. From the procedure of serving, we should first take stock of the heart, four plates of dried fruit, four plates of fruit and one plate of dessert. Dessert must be marked with a red dot to show congratulations to senior officials. Thirteen cold dishes, four meat dishes, four seaweed and four vegetarian dishes were served, with a master in the middle. This figure, which consists of thirteen cold cuts and the previous nine counting centers, is square from any angle.
Remove this table and serve nine hot dishes, all of which are famous dishes in Dali: Hongfu Qitian, Cabinet Middle Edge, Stewed Golden Gate, Shangguan Rabbit, Sour Soup Crispy Meat, Tremella Porridge, Raw Meatballs, Hot and Sour Belly, and Honey Wheel. Remove nine hot dishes and serve nine bowls. In the meantime, there are handmade flower rolls, a thousand layers of Chili pot helmets, oatmeal dough, and potherbs.
Jiupin, also known as Dali water mat, is named water mat because there are many soup dishes in the mat. Legend has it that Empress Dowager Cixi traveled west to Chang 'an and passed through Tongzhou Mansion. After tasting the "Nine Products and Thirteen Flowers" of Tongzhou Water Seats, she praised "the villagers are delicious and Tongzhou Water Seats are the best". The most authentic is the eternal nine products and thirteen flowers in Chaoyi Town, Dali.
Third, the dumpling feast.
Jiaozi is a traditional food in China. It is a unique creation of Xi 'an Dumpling Banquet Hotel in recent years to make this ordinary snack board a "elegant seat" for banquets. It, together with the famous imitation of Tang cuisine and beef and mutton bread in soup, is called "the three wonders of Xi diet".
Xi 'an's unique jiaozi feast lies in the diversity of materials, different flavors and beautiful shapes. Stuffing is sometimes made into fresh vegetables and common chicken, duck and fish, as well as Hericium erinaceus, sea cucumber, shark's fin, Nostoc flagelliforme and other delicacies.
