How to boil chicken soup?
Wash the stew, wash two chicken legs and remove the chicken legs and leg bones. Wash it in water again. If you don't like too oily soup, you can also remove the chicken skin. I threw away a leg skin here.
Ginger slices, red dates, chicken legs and chicken leg bones are put into the stew. Pour 600 ml of cold water.
Put the saucepan into a pressure cooker and add water, the height of which is about two-thirds of that of the saucepan. (PS: Both the saucepan and the pressure cooker are filled with cold water, because the saucepan I bought is a two-person saucepan, and there is no such deep pot to steam at home, so I use a pressure cooker, so I don't need to lock it, just cover it gently. )
Bring boiling water to a large fire and turn to a small fire for stewing. Stew for an hour and a half. Then open the saucepan, add the medlar and stew for another ten minutes. Add the right amount of salt and white pepper after cooking.
skill
You don't have to use chicken leg meat, in fact, you can also switch to local chicken, which is more nutritious. It's just that I don't like dealing with whole chickens, so I bought chicken legs. I think the chicken soup steamed in water is sweeter than the soup stewed in casserole. And the foam can be conveniently removed without protection. If you are used to the taste of traditional Chinese medicine, can you actually add a proper amount of astragalus and medlar to the soup? Astragalus membranaceus, angelica sinensis or codonopsis pilosula are all good choices in winter.
