Liuyu Baked Noodles is a famous Henan dish. It is a famous signature dish in Liangyuan Zhimeilou in Shanghai and Houdefu in Beijing. It's a pity that I have admired this dish for a long time, but have never tasted it myself. I have a recipe book at home, let’s make it today! Some details have been slightly modified, such as changing the Yellow River carp to crucian carp, changing the fried dragon beard noodles to thinly sliced ??noodles, half fried, and generally boiled.
① Slaughter and wash the crucian carp, and cut it with a knife. Spread a little salt to marinate
②Mix eggs, starch, salt, and pepper into a slurry and apply it on the fish
③Finely cut the noodles, fry half of them, and cook half of them in cold water , spread on the bottom of the plate
④ Heat oil and fry the fish thoroughly (note that I did not fry the fish until it is battered, that is the color of the fish itself)
⑤ Take it out and put it on a plate
⑥ Add starch, shredded green onion, minced ginger and garlic, vinegar, sugar and water, mix well and bring to a boil, then pour it over the fish and noodles.
