What does pitaya add that won't fade?
Pitaya will become lighter when exposed to high temperature. I personally made patterned steamed bread made of dragon juice, which will turn yellow when steamed. At that time, I also wondered why this happened. After asking about it, I know that the anthocyanins in pitaya will become shallow when exposed to high temperature, so it will change color.

I'm sure you're also wondering why the special steamed buns are so dark and bright. First of all, they are not pure vegetable juice as they say. As mentioned earlier, some vegetables or juices will become weak when steamed. They only add food pigments to fix the color, so the color will look beautiful. Is edible pigment harmful to people? I don't know. I think I'd better not use it at home, but eat it all myself.

Ordinary steamed bread can no longer satisfy people's taste buds, and there are more and more methods of steamed bread, such as spinach steamed bread, purple potato steamed bread and pumpkin steamed bread. Today I'm talking about pitaya steamed bread, which some people call color-changing steamed bread. We use red pitaya to make steamed bread. The raw embryo is purple, and it turns pale yellow when steamed, which is also its magic.

The reason why pitaya steamed bread changes color is mainly because pitaya contains a variety of anthocyanins, which are sensitive to light and high temperature, and generally destroy its structure when the ambient temperature is higher than 70 degrees. Then when we steam steamed buns, the highest temperature in the steamer can reach 100 degrees, so it is not surprising that pitaya steamed buns will change color when steamed.

So is there any way to keep the steamed bread from discoloring? There are still some ways. I know three ways. One is to add a proper amount of food pigment, the other is to add a proper amount of purple potato, and the other is to use red and blue grass juice.

When we buy a birthday cake, we will see that the color of cream is colorful, which looks very bright and appetizing. The colorful fruit and vegetable steamed bread sold outside is also very bright, but we can't make it so bright at home. This is because merchants add food pigments in the production process, and food pigments are also divided into natural food pigments and synthetic food pigments. Natural edible pigments are pigments extracted from animals or plants. Compared with synthetic pigments, they are very safe, but the cost is higher and the price is more expensive. It is best to choose natural edible pigments for home use.

If you just don't want to add food pigment, but want the color and taste of pitaya, you can only add a proper amount of purple potato. You need to peel and steam the purple potato, then mash it into purple potato paste, and mix the purple potato paste with flour when kneading dough. Because purple sweet potato puree contains water, you should also add a relatively small amount of dragon juice.

Then there is the use of red and blue grass juice, which will be sold in some vegetable markets. We cleaned the red and blue grass we bought, then cut it into pieces, put it in a pot, add a proper amount of water, then boil it with strong fire and simmer for about 30 minutes, and take out the red and blue grass juice. We can use it when it cools down. Remember not to add too much water, or the color will become lighter. When making red dragon fruit steamed bread, just put two-fifths of red and blue grass juice.
