Jiaozi was called Jiao 'er in the early days, and the inventor was Zhang Zhongjing, a medical saint in the Eastern Han Dynasty. When Zhang Zhongjing retired from his old age and returned to his hometown of Baihe, he saw that many people on the shore were hungry and cold, and many people's ears were frozen. Therefore, Zhang Zhongjing decided to treat these poor people. After Zhang Zhongjing's research, he cooked a soup to dispel cold and jiao 'er, and cooked mutton with pepper and some drugs to drive cold.
So it is also called Jiaoer. After cooking, give it to those patients, and each person will add a bowl of soup with two pieces. After eating, the whole body will be warm and the blood will circulate in the intestines. After a period of time, the frozen ears will be fine, and this process of dividing the ears will last until the New Year's Eve. In order to celebrate the recovery, people decided to eat jiaozi every winter solstice and the first day of the New Year's Day.
In the north, jiaozi is an indispensable holiday meal every year on the winter solstice of the lunar calendar, regardless of the rich or the poor. The proverb says, "On October 1st, when the winter solstice comes, every family eats dumplings." This custom was left in memory of Zhang Zhongjing, a "medical sage", who gave up medicine on the winter solstice. Up to now, there is still a folk song in Nanyang that "the winter solstice misbehaves jiaozi Bowl, and nobody cares about it".
At that time, he found that many people were sallow and emaciated, and everyone was frozen by the cold winter. Zhang Zhongjing, a medical sage, gave alms on the winter solstice, which is now jiaozi. Moreover, Zhang Zhongjing gave alms until New Year's Eve, so everyone also ate jiaozi on the morning of New Year's Day!
At that time, the practice of Quhan Jiaoer soup was like this: mutton, pepper and some cold-dispelling herbs were boiled in a pot, and then these things were taken out and chopped, and the dough bag was made into ear-shaped "Jiaoer". Later, everyone began to learn this practice, and gradually, there were more tricks in jiaozi.
